Many people find it difficult to digest nuts and seeds. Nature has set it up this way to protect the nuts and seeds so that they will germinate when the perfect conditions are present. They have nutritional inhibitors and toxic substances that can be removed naturally when there is enough water or rain to help a new plant germinate. Un-soaked nuts and seeds can cause a lot of digestion problems and absorption of minerals is greatly reduced in order to protect and preserve the seed and nuts. All of this can be minimized or eliminated by soaking. Then your body not only can digest these foods but the nutrients and minerals skyrocket and become unlocked and available for your body to use.
When my daughter Maci was having severe food allergies, nuts that were soaked became something she could not only enjoy again but something that greatly helped her absorb the minerals and vitamins she was needing. These nuts are so good and the added Himalayan salt makes these nuts have more minerals that our bodies are craving.
A few weeks ago I had Chris Johnston, my friend and web guy come over to help me with my website. He has helped me so much and fixed things that have bugged me for years. I feel such appreciation for the talent he has, I try to find foods that he can enjoy while helping me. I call this food showering. You know when I really appreciate someone because I will start to shower them with special foods that make them feel good. Can’t help it occupational habit and one of the ways I express myself. That night I got out a large bottle of kefir soda and these nuts. By the time the night was over we had consumed the entire bottle of soda and a large bowl of nuts. He went home and told his wife about these nuts and she proceeded to make him some. They are addictive and some of the best nuts you will ever have. I have a hard time keeping them around because we eat them so fast.
I have recently become aware of the importance of extra minerals in our diet. Minerals are also a vital part of your cells, blood and lymphatic fluids. They are critical for all body functions, including muscular contraction, electrolyte balance, blood sugar regulation and pH balance – but you need all minerals, and in a form which your body can readily use. Himalayan salt contains 84 minerals vital for human health. These minerals include sodium, chloride, potassium, calcium, magnesium, iodine, iron, zinc, manganese and many more.
Soaked your nuts and add some of this beautiful pink salt that adds minerals. They are delicious and good for you as they are fun and easy to make. One of my favorite snacks. The pink salt gives my a thrill because of its color. I have a weakness for pretty things and when it comes packaged as a food, I am left completely defenseless. I leave it in a special bowl on my counter. I love it that there is pink salt in this world.. who would have thought it could be so good for you?
Soaked Himalayan Nuts
Soaked Himalayan Nuts
3 cups of almonds
1 1/2 to 2 tbsps of Himalayan crystal salt finely ground Adjust according to taste.
Soak nuts in filtered water and add 1 tsp of salt and leave to soak overnight or 12 hours.
Drain and rinse nuts in a colander. Place in a bowl and toss with salt and spread onto sheets and dehydrate at 115 degrees for 12 to 24 hours or until nuts are crispy and dry. You can also do this in an oven at the lowest setting. It should only take a few hours depending on your oven setting. Makes sure they are dry and crispy, or they could mold. Store in jars with lids or you can freeze or refrigerate them if you are not going to eat them in the next month. They are really good so I doubt that they will last long and not be eaten.

This is great. I have a hard time digesting nuts, too…and it’s too bad, because i love to eat them. This should be a good alternative for me
