Yogurt with Blueberry Compote

This is a yummy topping for yogurt and super easy to make. You can even change it up with other fruits, like strawberries or raspberries. Top it with some slivered almonds for the perfect snack or breakfast.

Ingredients

  • 1 cup Yogurt Plus
  • 1 pint blueberriesthis is about 2 small packages of berries
  • 3 tablespoons maple syrup
  • 1 tablespoon slivered almonds

Instructions

  • Set aside half of the blueberries, (one small package) place the other blueberries in a small saucepan. Mix in 2 tablespoons of maple syrup. Save the remaining tablespoon for when you serve the yogurt.
  • Cover and cook over medium-low heat, stirring occasionally until the berries start to collapse and release their juices. This should take about 5 minutes.
  • Remove from the heat and add the remaining blueberries. The mixture will be thin until refrigerated.
  • Transfer to a small jar and refrigerate until thick.
  • Top yogurt with blueberry compote, extra tablespoon of maple syrup, and slivered almonds.
