Key Lime Kefir Pie
Ingredients
Graham Cracker Crust
- 6-8 cups Sprouted Graham Crackers – or storebought grahams
- 6 tablespoons melted butter
- 3 tablespoons coconut sugar
Key Lime Pie Filling
- 2 cups cream cheese – room temperature
- 1½ cups Kefir
- 1 cup ricotta – (or more cream cheese)
- 1 teaspoon key lime zest
- 5 key limes – juiced
- ½ cup Honey
- 1½ tablespoons Matcha Tea Powder – (for green coloring)

Instructions
Graham Cracker Crust
- Using a food processor, process your graham crackers until you have fine crumbs.
- Mix in your melted butter and coconut sugar using a fork until combined.
- Press into an 8-9 inch pie plate.
- Chill for at least 1 hour
Key Lime Pie Filling
- Using a food processor, combine all ingredients for the pie filling, pulsing until smooth.
- Pour into your chilled pie crust.
- Chill in the refrigerator for at least 3 hours and then serve!
