Green Kefir Smoothie Pancakes
I love making these pancakes with einkorn flour the most ancient yeast there is. Although high heat kills most probiotics, you will still get some benefits from the kefir in this recipe the main one being that it is 99% lactose-free and high in protein! Add the Maple syrup topping and get oodles of probiotics with your pancakes.
Ingredients
- 2 cups spinach
- ½ cup Kefir
- 1 large egg
- 1 teaspoon Coconut Oil – melted
- 1 cup Sprouted Spelt Flour – einkorn flour is great too!
- ½ teaspoon baking powder
- ½ teaspoon Celtic Sea Salt
For the Pan
- 2-3 tablespoons Coconut Oil
Kefir Maple Syrup
- ½ cup maple syrup
- ⅓ cup Kefir
- 1 teaspoon vanilla

Instructions
- Using a high speed blender, blend spinach, kefir, egg, 1 tsp oil, flour, baking powder, and salt until smooth.
- Heat a small amount of oil in large pan or griddle over medium heat. Saving some of the oil for the next batch.
- Pour about 3 tablespoons of the pancake mixture onto the griddle, making as many pancakes as will fit and cook for 2 minutes.
- Flip and cook for an additional minute then repeat with remaining batter.
- Serve or store with kefir maple syrup topping
Kefir Maple Syrup
- Blend together with a blender, syrup, kefir and vanilla until smooth and creamy.
- Serve over pancakes.
