My daughter Maci’s birthday fell on Easter this year. Birthdays are big deals at our house and making a cake is always a big highlight. Making your own cake with healthy ingredients can be a challenge. When you buy a cake at the store they are full of hydrogenated oils chemicals and preservatives. It is so worth the time if you can make one yourself and put some healthy ingredients into it.
Here is the cake I made for her birthday. Find the best Dutch processed cocoa you can find. It makes this cake moist, rich and full of flavor. Here is the cocoa I use;Penzeys Spice Dutch process cocoa
This tastes every bit as good as a cake from the store. Your family will love it!
German Chocolate Cake
3/4 cup butter or coconut oil, softened
1/2 cup sucanat
1/2 cup maple syrup
3 eggs
1/2 cup plain kefir
2 tsps vanilla
2 cups sprouted soft white wheat or sprouted spelt flour
1/2 cup Dutch processed cocoa powder
1 tsp baking soda
1 tsp baking powder
In a medium bowl, cream the butter and sweeteners, and then add the eggs, kefir and vanilla. in a large bowl whisk the flour, cocoa, baking soda and baking powder together. Gently stir in the dry ingredients into the wet, folding it only a few times. Don’t over mix. Grease and flour two 8“pans and bake at 350 for 25 to 30 minutes or until toothpick inserted in center comes out clean. Frost with topping when cake is cool.
Frosting
2 eggs
1 cup coconut milk
1/2 cup sucanat
1/4 cup butter or coconut oil
1 1/4 cup unsweetened coconut flakes
3/4 cups chopped pecans (soaked)
In a saucepan, mix together the first four ingredients over medium heat until thick and bubbly. Remove from heat and add coconut flakes and pecans. Spread over cooled cake.

Hi Donna! My son’s 3rd birthday is coming up, so I’m looking for a ‘healthy’ cake. This recipe looks awesome, except that I don’t have sprouted flour. Can I just take store-bought White Wheat or spelt flour and soak it overnight with the kefir and oil?
You can try it but I am not sure of the results. Let me know if it works. The pb cupcakes on my dessert page are another alternative that I make for birthdays.
I wonder if I can substitute a gluten free flour blend? Looks super yummy!!

I smiled and clhkcued at your blog. I’m glad you’re enjoying your kefir. It is a fun experiment isn’t it! I mostly use it for smoothies. I’m glad you got over your initial hesitation, I felt the same way. I also use it to soak grains for bread making. Soaking is another misnomer like grains . Anyway doing it, the soaking, that is, takes away the phytates in wheat which is the source of the digestive problems inherent in using wheat, apparently, from what I’ve learned. We had a B2B about this if you want more info. or check out passionatehomaking.com and search soaking grains.
This looks soooo yummy! German Chocolate cake has been my fav since I was a little girl:) I am curious though…does cooking the kefir “kill” it?

It does kill the kefir when you cook it. Makes the cake super moist, and this is why I put it in there. Similar to using buttermilk in a recipe.
