Ingredients
Apple Compote
- 2-3 whole apples – peeled, cored and cut into ½-inch chunks
- 2-4 tablespoons water
- 1 teaspoon butter
- 1 teaspoon cinnamon
- ½ teaspoon Vanilla Extract
- 1 tablespoon Lemon juice
Bowl
- 1 cup cooked oatmeal
- ½ cup Greek or Skyr Yogurt – strained
- 2 tablespoons Vanilla Protein Powder
Toppings
- drizzle maple syrup
- 1-2 tablespoon Pecans – or your favorite nut

Instructions
Apple Compote
- Add lemon juice to apples in a medium bowl and combine. Transfer to a medium pot, add butter, water, cinnamon, vanilla extract, and a pinch of fine salt, and heat over medium heat, stirring occasionally. When the apples release liquid, reduce the heat to medium-low and simmer, stirring occasionally, until the apples have softened. Taste and adjust the spices as needed. Set aside to cool.
Oatmeal Bowl
- Mix yogurt and protein powder until well combined. Then scoop over cooked oatmeal. Top with apple compote, maple syrup, and nuts. Serve immediately.
