- 3 lbs of potato
- 1 cup diced celery
- 6 hard boiled eggs, chopped
- ½ cup chopped red onion
- 1 cup of mayo
- 4 slices bacon cooked and crumbled
- 3 tbsp chopped fresh chives
- 3 tbsp fresh parsley finely chopped
- ¼ tsp black pepper
- 1 tsp Celtic sea salt
- ½ cup juice from Bubbies dill pickles or 1/2 cup from cultured fermented vegetable.
- Scrub potatoes and trim bruises and other imperfections Put into a sauce pan cover with water and bring to a boil. Reduce heat to med low, cover and cook for 20 minutes or until fork tender.
- Drain potatoes and chop into cubes and place in a large bowl with other ingredients. Toss until well combined.
- Enjoy warm or cold.

wouldn’t it be even more beneficiAL TO SOAK THE POTATOES FOR A FEW DAYS BEFORE COOKING THEM?…OR EVEN FERMENT THEM.
You could ferment them and it would add more benefits.
Can you use the left over PICKLE JUICE FROM bUPPIES TO MAKE MORE PICKLES?
You can but there isn’t has much beneficial bacterias as there would be with culture packages or kefir whey.

Where do you buy lacto mayo? I’ve never heard of it until now. I don’t know a lot about Fermentation, except that we do make kombucha.
You have to make your own lacto fermented mayo. I am posting my recipe soon. Fermentation is new to a lot of people. But it is really fun and easy let me know if you need help or feel confused.

I do have lacto mayo that I use.It is different than other recipes that use lacto mayo. I am a little picky about my mayo. I probably need to post it soon. It is really delicious. Thanks for reminding me.
