Ingredients
- 1 can light coconut milk
- 1 scoop Vanilla Protein Powder
- 2 tablespoons monk fruit – or Maple syrup
- 4 tablespoons Skyr or Greek – yogurt
- 18-20 whole mint leaves
- 2 tablespoons chocolate chips
- Magic shell topping – optional

Instructions
- Place all ingredients in a blender and blend for a minute until thoroughly combined.
Ninji CREAMi Ice Cream Maker instructions
- Place the blender mixture in the Ninji ice cream containers and freeze overnight.
- Remove the frozen CREAMi container from the freezer, place it in the CREAMi machine, and hit the “Ice Cream” setting. Remove the CREAMi container from the machine and check the texture. Add 1-2 tablespoons of milk. Place the container back in the machine with the lid on and select “Re-spin.” Stir in the chocolate chips. Enjoy! Add some Magic Shell topping for extra chocolate flavor.
Regular ice cream maker
- Place the mixture from the blender directly into the ice cream maker and follow the manufacturer's instructions.
