Roasted Carrot Hummus
Hummus is made with chickpeas which are a resistant starch that feeds your gut microbes quite powerfully! Resistant starches work when they're cool or at room temperature. The sugars once cooled are converted to resistant starches which actually resist digestion. Combine this with carrots and you have a dip that is loaded with tons of Vitamin, A— lots of prebiotics and is creamy and delicious.
