Soda for summer

Probiotic drinks are a must in the summertime. As you try to cool off and have something that is fizzy and delicious, there are two drinks I recommend.  I drink kombucha and kefir soda all the time. You can make different flavors and you can even make a float with probiotic ice cream that is especially delicious in the summertime! Each of these sodas has a special probiotic yeast, Saccharomyces boulardii that makes them bubbly along with strains of good bacteria too. Check out the benefits of this probiotic yeast that makes the drink bubbly.

Saccharomyces boulardii -The Good yeast

Saccharomyces boulardii (S. boulardii) is an incredible probiotic and when you make kombucha and our kefir soda, you'll get lots of this powerful probiotic yeast. It is what makes these drinks bubbly. The good yeasts eat the sugars out of the drink and create tons of bubbles, fizz, and probiotics. S. boulardii is one of the most researched probiotics and has been used worldwide to support gastrointestinal health. To be an effective probiotic it must survive its passage to the colon. This means it needs to survive at the body temperature of 98 degrees and be resistant to stomach and bile acids, and then survive the complex and diverse microbial world of the intestinal tract. S. boulardii does this and more, and it's resistant to antibiotics, heat, and stomach acids. It has been used in hospitals to help with acute diarrhea in children and adults, offering support for Clostridium difficile (C. diff), bowel disorders, AIDS patients, children with autism, and inflammatory bowel disease. If you need to take an antibiotic, it's a powerful probiotic to take since it's resistant to antibiotics and it will be helpful if you find yourself with Candida overgrowth.  It does not encourage candida but rather the opposite. S. boulardii is unrelated to the yeast Candida albicans and other Candida species. A healthy gut only has a yeast content of 0.1% yeast, Candida albicans being the most prominent yeast present. We need not only good bacteria but good yeasts as well to keep us in balance. When you have Candida proliferating, it will decrease the acidity of the gut making it susceptible to harmful bacteria and yeasts. S. boulardii exerts the opposite effect producing lactic and other acids known to inhibit potentially harmful Candida yeast species.[1]

The Discovery Of Saccharomyces Boulardii

S. boulardii was discovered by French microbiologist Henri Boulard in the late 1920s in Indochina when he was searching for a new strain of yeast that would withstand heat for making wine. He was a visitor during a cholera outbreak and noticed that some people who did not develop cholera were drinking a special tea made from the outer skin of tropical fruits (lychees and mangosteens) and cooking them down to make tea. He isolated the probiotic strain of yeast and named it “Saccharomyces boulardii.”  In his research of the yeast, he found that it had multiple protective effects for rats infected with cholera. And when Boulard himself became a victim of cholera, he found that he could stop the associated diarrhea by drinking a tea that contained this yeast. The patent for this yeast was bought by Laboratories Biocodex in 1947 which began manufacturing it and began using it on patients exhibiting acute diarrhea. They have done over 53 randomized controlled clinical trials, encompassing 8475 subjects, that investigated the safety and efficacy of S. boulardii. The studies were done in pediatric and adult patients in which they found it had an 81% efficacy rating. His discovery improved gastrointestinal health across the board, and S. boulardii became the most thoroughly researched of all probiotic supplements. [2] It is now used to treat C. diff, acute diarrhea, antibiotic-associated diarrhea, some parasitic forms of diarrhea, and other gastrointestinal disorders. [3, 4]

 Summer Kombucha

Kombucha is a must-have in the summertime! When the body is exposed to excessive heat, the liver can become stressed and kombucha can help! Drinking kombucha can keep you cool and hydrated in the summertime. It can also help your liver which is one of the organs most vulnerable to excessive heat. Just like a plant can wilt in the heat, our bodies can suffer as well. Kombucha has special compounds that help the liver do its job in detoxifying you and keeping the liver running smoothly. It can also keep the heat and inflammation out of your joints.

Kombucha is packed with glucosamine which helps prevent joint damage by supporting the preservation of collagen. It does this by increasing hyaluronic acid which is important for lubricating your joints. When joints are better able to move, the collagen isn’t worn down as much. Kombucha is a very healing drink for many different parts of the body.

Not only does kombucha have the powerful good yeast S.boulardii, but it also has these beneficial bacteria and yeasts and beneficial compounds.

Kefir Soda Summer

Kefir soda starter is our exciting new culture that not only has S. Boulardii but many good bacteria including one of my favorite ones, bifidobacterium. It is the most bubbly drink you'll ever have and it is so easy to make. The first bottle only takes about 4 days to make and then after that, you can use a portion of this bottle as a starter and it will make you dozens of bottles in less than a day. The good bacteria and yeasts eat most (85%) of the sugar and once you place it in the fridge it continues to consume the sugars to zero. We tested it twice to make sure and it's a great drink if you are wanting to have a super soda without the sugars.

Good bacteria can be your best ally during the summer months. You have trillions of living microorganisms abiding in and all around you. These microbes also account for about 70% of your immune system. It can help you in the summer if you have issues like constipation, diarrhea, low immunity, adrenal fatigue, and even if you want to have a better mood. These drinks can help support adrenal stress and I have seen this time and time again. If you have an afternoon slump, this is the drink for you.

Did you know that bacteria help to regulate body temperature? The stronger and healthier your gut microbiome, the easier your body can regulate temperatures and keep an inflammatory state at bay.[5] Check out all the bacteria and yeasts in Kefir Soda!

Bacteria And Yeasts

Bifidobacterium longum has long been regarded as one of the most beneficial members of the human gut microbiome. Lower levels of this beneficial bacteria have been shown in obese and diabetic individuals and in individuals taking antibiotics. Those suffering from irritable bowel syndrome or inflammatory bowel disease have also shown lower levels of bifidobacteria as well. B. longum also helps work on anxiety- and depression-like behaviors. B. longum can inhibit inflammation by regulating the balance of the immune system. It can improve intestinal barrier function.

Saccharomyces boulardii is my favorite probiotic yeast. Not only will it make this soda super bubbly, but it also has a lot of health benefits. And, it can't be killed by antibiotics. When S. boulardii is present, it inhibits toxins from binding to intestinal receptors and steals the metabolites it needs to survive. Thus many pathogens pass out of the body unable to survive in the presence of this powerful probiotic. They even found that other pathogen strains like E. coli, Salmonella typhimurium, and S. typhi adhere to the surface of S. boulardii, thus preventing them from attaching to the mucosal lining and passing through the body rendering them harmless.

Lactobacillus delbrueckii can help the body break down food, absorb nutrients, and fight off bad organisms that might cause disease. It has been used to aid digestion, prevent diarrhea, and relieve symptoms of irritable bowel syndrome.

Leuconostoc mesenteroides can inhibit the growth of pathogens and also prevent Avian influenza and H1N1.
