I live in Australia and it is humid year round. It’s winter now, but still kefir ferments so rapidly. I have been putting it in refrigerator at night to slow it down. Grains stay small. Should I put it in like an esky to keep more even temp?

I have not tried the easy kefir, yet since I have too much kefir I started freeze drying it in small cubes. will it lose the good bacteria/yeast from the freezin? I also freeze dried the grains and the revive after several feedings.
