Kefir Matcha Chia Pudding
Chia seeds are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fiber, iron, and calcium. Since they're mostly fiber, they are perfect for those watching their carb intake. When it settles in the fridge, it has a pudding texture, amazing flavor, and lends itself to endless topping possibilities. You might also want to try my lemon curd topping for another yummy option.

Topping
- ½ cup Strawberries cut up into small pieces
- ½ cup Bananas cut up into small pieces
- ¼ cup macadamia nuts chopped
Pudding
Place Matcha tea in a jar or small bowl and add kefir. With a small mixer, or you can use a whisk, mix and combine thoroughly until the matcha tea is mixed in and no powder remains.
Add maple syrup, chia seeds, and vanilla into the jar and stir together until well combined. Place in refrigerator for 2 hours or overnight to allow it to thicken.
When chia pudding is thickened, add toppings and eat immediately.
