Garlic N Kefir Cauliflower Mash

I use cauliflower to make a mash that tastes like mashed potatoes but has all the health benefits of this powerful sulfur veggie. Cauliflower is very low in calories yet high in vitamins. In fact, cauliflower contains almost every vitamin and mineral that you need. I encourage you to eat more cauliflower and this dish is so good you’ll want to make it again and again.

  • Chop the potato and cauliflower into small chunks.
  • Place cauliflower and potato into a steamer rack and steam over medium heat until the cauliflower is very tender, about 12 minutes.
  • Transfer the cauliflower, potato, and parmesan to the bowl of a food processor.
  • Allow to sit until no longer steaming.
  • Process until the ingredients are pureed and almost smooth in texture.
  • Add the kefir cheese and fermented garlic to food processor and pulse a few times.
  • Season the puree to taste with salt and pepper, and serve
