Baked Sourdough French Toast

The recipe is made with leftover sourdough bread. You can make it the night before and bake it in the morning or bake it right away. This is a new family favorite and one they gobble up so fast I have to double the recipe.

French Toast

  • Grease casserole dish with coconut oil. Tear the bread into chunks and distribute evenly in casserole dish.
  • Whisk together the eggs, coconut milk, sugar, and vanilla.. (I do this in a blender for a few seconds) Pour evenly over the bread. (You can cover this and store in the refrigerator overnight or bake it right away.) Preheat oven to 350 and add topping before baking.

Topping

  • In a small bowl mix thoroughly the flour, sugar, cinnamon, salt, and nutmeg. Add melted coconut oil and combine until it's evenly mixed.
  • Sprinkle topping over bread and bake for 45 minutes to an hour. Longer baking makes it crispier while shorter time results in a more custardy texture.
  • Serve with fresh fruit, kefir, and maple syrup.
