Kefir Pesto Sandwich

Kefir pistachio pesto is crazy good. It never lasts because everybody eats it so fast. This sandwich has tons of herbs, and cheeses, and lots of probiotics and is one of my family's favorite sandwiches. It’s super easy to make and one thing you should know about herbs, if you’re eating the leaves, it’s generally considered a herb, but if you’re eating something else like the bulb or stem, it’s technically a spice. Herbs have more antioxidants than vegetables but you tend to eat less of them. This sandwich is loaded with fresh basil and parsley so you’re getting lots of nutrient-dense herbs and probiotics too!

Instructions

  • Slice open bun.
  • Spread pesto on both slices of bun.
  • Top with cheese and sliced fermented cherry tomatoes.
