Elderberry syrup has been used for many years for the prevention of colds and flu. Combined with water kefir, you get an extra boost and a crazy delicious drink that you will love, love!
Add all ingredients to a sauce pan or pot. Bring to a boil, then reduce heat and cover. Let simmer for 45 minutes. Let cool.
Strain out elderberries.
Elderberry Water Kefir
Add 2 tablespoons of elderberry syrup to a 16 ounce bottle. (Make sure you use thick glass bottles such as Grolsch or Bormioli. Bottles bought at craft stores can explode.)
Add 15 ounces of Basic Water Kefir to the bottle leaving a small amount of room (about 1 inch) at the top. Seal your bottle.
Second fermented water kefir only needs to sit 1-3 days or until it becomes bubbly. Check it often by opening it to see if it is bubbly. (Warmer homes take less time)
Once ready, you can drink or refrigerate for storing. (Drink within 1 week for optimal flavor and benefits.)
Note: You can use your remaining elderberry syrup to make more water kefir (or kombucha). Or store in a glass jar in the fridge for up to 3 weeks.
