Einkorn Chocolate Oatmeal Cookies

I have made these cookies so many times. I love making desserts with einkorn flour it has a buttery flavor and I digest it so much better than I do other flours. I've also been using a lot of date sugar in my recipes since it is a prebiotic with a lot of fiber and seems to keep your blood sugar more stable. It also gives these cookies more flavor. I have always loved oatmeal cookies and these are no exception. They are super easy to make and come together quickly. I make them all the time when my family wants something special. Oh and try the HU chocolate chips. They started to show up everywhere. They're sweetened with dates and taste divine.

  • Preheat oven to 350° F and line a baking sheet with parchment paper.
  • In a large bowl using a wooden spoon, blend together all of the ingredients except the oats and chocolate chips. It might take some stirring since it will feel a little dry but einkorn absorbs liquids more slowly but it will come together.
  • Add chocolate chips and oatmeal to the mixture and stir just till combined.
  • Drop by spoonfuls onto baking sheets giving a little room between the cookies.
  • Bake for 12 - 14 minutes or until lightly golden and lightly brown. Cool cookies until firm.
