Preheat oven to 350° F and line a baking sheet with parchment paper.
In a large bowl using a wooden spoon, blend together all of the ingredients except the oats and chocolate chips. It might take some stirring since it will feel a little dry but einkorn absorbs liquids more slowly but it will come together.
Add chocolate chips and oatmeal to the mixture and stir just till combined.
Drop by spoonfuls onto baking sheets giving a little room between the cookies.
Bake for 12 - 14 minutes or until lightly golden and lightly brown. Cool cookies until firm.
