Einkorn Biscuits

These wholesome biscuits are made with einkorn flour, date sugar, and kefir (or yogurt) for a light tangy flavor. Cold butter is cut into the dry ingredients until the mix is crumbly, then kefir is added to form a tender dough. After rolling, folding, and cutting into biscuits, they’re baked at 400℉ until golden and delicious. Einkorn flour is an ancient grain that's often praised for its nutrient-dense profile. It's richer in protein, vitamins, and minerals than modern wheat, and many find it easier to digest. Date sugar, derived from whole dates, provides a more natural source of sweetness along with trace minerals and fiber, offering a better alternative to highly refined sugars.

  • Preheat the oven to 400℉
  • In a large bowl, mix together the dry ingredients: flour, baking powder, sugar, and salt.
  • Chop the cold butter into cubes (I like to freeze the butter for a couple of minutes before adding it) and cut it into the dry ingredients with two forks or a pastry blender, until a course texture is achieved.
  • Add in kefir and stir until just mixed and the dough comes together.
  • Place the dough on a lightly floured surface. Roll the dough out to 3/4 inch thickness and fold in thirds.
  • Flatten dough to about 3/4 inch thick with a rolling pin and cut biscuits out with your biscuit cutter or glass jar.
  • Place on a baking sheet and bake for 15-20 minutes until they start to turn golden around the edges.

Alternate food processor instructions (My Favorite!)

  • I like to use a food processor to make the fluffiest high rise biscuits. Pulse dry ingredients for a few pulses. Add cold butter (I like to freeze the butter for a couple of minutes before adding it) and pulse again a few times until butter is in bits about the size of small peas. Don't over pulse. Add kefir and pulse until dough comes together. Don't over pulse! Then proceed with steps 5-7.
