Kefir Miso No-Bake Cookies

No baking and you can make these cookies in a flash! They take just minutes to throw together. I added a little miso to this recipe for added probiotics. Miso has a number of health benefits including a whole team of enzymes and microbes unique to this cultured food. Miso contains lysine, which helps our bodies absorb calcium and it also contains high levels of magnesium which helps build strong bones. Miso has lots of B vitamins that are increased by fermentation. B12 is also found in miso which is likely from the lactic acid bacteria.

Instructions

  • In a medium bowl, mix coconut oil, cocoa powder, honey, and oats.
  • Add kefir, miso, and peanut butter and mix until well combined.
  • Scoop with a small cookie scoop onto parchment paper.
  • Place in the fridge for 30 minutes.
  • Serve or keep stored in a sealed container in the refrigerator.
