Sprouted Sandwich Rolls

These are perfect as rolls or sandwiches and they freeze beautifully. Remember when you use sprouted flour to make your bread, enzymes are released during the sprouting process, which break down proteins and carbohydrates. This process helps make sprouted grain food low glycemic and easier to digest.

  • Stir together the yeast and water in a small cup and let stand about 5 minutes active the yeast.
  • In a large mixer bowl combine the yeast mixture, kefir, butter, honey, and eggs. Once combined add the salt and flour, and mix with a mixer for 3-4 minutes or 8 minutes by hand.
  • Cover the bowl with saran wrap and let rise until double 2- 4 hours depending on the temperature in your home.
  • Once doubled, roll the dough into little buns, about 12, and place in a greased 13x9x2 inch pan.
  • Cover and let rise again until doubled about 1 hour.
  • Bake at 375° F. for 20 to 25 minutes or until golden brown.
