Sick Day Soup

This is the greatest soup when you're sick. It's comforting and filled with ingredients that are soothing and healing. And the taste is so surprisingly good you'll be making it when you're not sick too.

Coconut oil contains lauric and monolaurin acid, both believed to be antiviral compounds.
Sweet potatoes, kale, garlic, onion, and carrots are loaded with antioxidants and compounds that support your immune system, and they are prebiotic too. Garlic can be a potent viral and bacterial agent that can help destroy the flu virus before it can transform into a full-blown virus in the body. That is because it contains sulphur compounds called allicin and allian that have a direct antiviral effect.
Cinnamon is also considered an antiviral compound that was effective in deactivating viruses in select organisms and not only that, it makes this soup taste so good. Combine that with collagen in the chicken broth which is soothing to the gut lining and you have a wonderful food - like medicine - made into soup! 
Herbs are powerful medicines. Thyme (active ingredient, thymol) is an excellent antiseptic and anti-fungal, making it ideal for soothing sore and inflamed throats.

Ingredients

  • 2 tablespoons coconut oil
  • 1 large onion chopped
  • 1 small sweet potato cut into small cubes, leave the peel on
  • 1 cup carrots cut into small pieces
  • 3 cloves garlic chopped into small pieces
  • 1 cup kale chopped and deveined
  • 8 cups chicken bone broth
  • 1 cup Water, spring or filtered with minerals
  • ¼ teaspoon cayenne pepper
  • 1 tablespoon lemon juice
  • 1 teaspoon Celtic Sea salt
  • 2 teaspoons Thyme
  • ½ teaspoon black pepper freshly ground
  • ¼ teaspoon cinnamon
  • 1 batch Sourdough Dumplings
  • 1 tablespoon parsley fresh or dried

Instructions

  • In a large soup pot, heat oil over medium heat. Add your onion and cook until the onion is soft and translucent, about 5 minutes.
  • Add the sweet potato and carrots, stir so they are coated with some of the oil. Allow to cook for about 5 minutes. Add the broth, water, carrots, kale, garlic, stock, thyme cayenne, salt and pepper, and bring to a boil.
  • Lower heat and simmer about 20 minutes.
