Pumpkin Seed Kefir Topped Oatmeal

Pumpkin seeds are exceptionally high in magnesium. Two tablespoons of pumpkin seeds contain 74 mg of magnesium, about 1/4th of the daily recommended dietary allowance. Oats are prebiotics which feed the good bacteria and makes them grow . . . like crazy! Together, they're a perfect breakfast for you and your microbes.

  • Add almond milk, quick oats, pumpkin puree, and pumpkin seeds to your crockpot and stir.
  • Set your crockpot to the warm setting and let cook overnight for 8-9 hours.
  • In the morning, scoop your desired amount into a small bowl and drizzle with your pumpkin kefir and honey. Top with pumpkin seeds!
