  • Add flour, eggs, salt, and water to a food processor. Pulse the dough until it forms into a ball. Cover with plastic wrap and let rest for 10 minutes.
  • Sprinkle the dough with more flour. Roll it out into a rectangle as thin as you can manage. You can also use a pasta press.
  • Slice the rolled-out dough into strips of the desired length and thickness with a pizza cutter or use a pasta press if you have one. Leave the noodles on the counter to dry while making the soup. I like to make wider, thicker noodles.

Chicken Soup

  • Place the olive oil, onions, and garlic in a large pot until softened, about 5 minutes.
  • Add the carrots, celery, chicken broth, and water to the onion and garlic. Bring to a boil. Let it boil until the vegetables are cooked.
  • Add the noodles, chicken, parsley, poultry seasoning, salt, and pepper, and let it boil until the noodles are cooked. Serve immediately.
