 Try this cultured meal for your family.

One of my favorite meals is a big bowl of sprouted pureed beans cooked with an onion topped with cheese, cultured salsa and my special guacamole. Throw all that on a sprouted homemade tortilla and I am in heaven. In the summer time when tomatoes taste like candy you can’t beat this meal.

Ingredients
  • 3 avocados
  • lime juicefrom ¼ Lime
  • 1/2Tablespoon Celtic Sea Salt
  • 3Tablespoons cilantro
  • 1small Serrano chilichopped and seeded
  • 1Tablespoon cultured veggiesyou can use the juice from any cultured veggies and it works great
  • 1small onionschopped
  • 1handful cherry tomatoeschopped

  1. Scoop out avocados and mash with a fork
  2. Add other ingredients and mix well.

  1. Combine four and salt in a bowl or food processor add the oil and mix thoroughly. Mix the water with the food processor running
  2. Let the dough sit for 10 minutes covered.
  3. Turn out the dough onto a lightly floured surface, knead it a couple times and pat into a disk.
  4. Pull and roll the pieces into 10 to 12 pieces.
  5. If you have a tortilla press , ( I highly recommend them they are cheap and super handy) use it to flatten each ball as you make and cook them. If you're rolling by hand, take one of the balls and flatten it into a small disk. Using a floured rolling pin and a floured surface, roll the tortilla into a flat disk about 6- to 8 inches in diameter.
  6. Heat a heavy ungreased griddle over medium hi heat. Toss tortilla onto griddle and let it heat for 1 minute the use tongs and flip to bake on other side.
  7. Bake until each side begins to brown and puff in spots about 1 minute per side. While the first tortilla is cooking roll the next one.
  8. Transfer the bake tortilla to a plate and make the next one.
  9. Cover them with a towel to keep them soft and warm.

  1. Do you let the Guac ferment at all or you just add cultured juices…?

    Or its basically just guac with probiotic juice then? Or does the guac sit and ferment for awhile?

  2. How long will the guacamole last before it turns brown? And when you sprout the beans is it The beans in bags at the store? How do you sprout them?

  3. This guacamole looks amazing! I’m going to try putting some juice from my fermented veggies in my next batch.

    How do you make the beans? You sprout them and then mash and cook?
