- 1 1/2 cups of almond flour or almonds that have be crushed in a food processor.
- 2 tbsp melted butter
- 3 -4 chopped dates
Filling
- 1 tbsp unflavored gelatin or 2 pcks unflavored gelatin
- 3/4 cup of milk
- 1 cup of 2nd fermented lemon kefir
- 1 -8 oz pck of cream cheese
- zest of one lemon plus the juice
- 1-2 cup of chopped strawberries
- Your sweetener of choice. I like to use several kinds of stevia. It taste better when you use several kinds. You can also use honey or any other sweetener that you use on a regular basis.
Instructions
- Place all ingredients for crust in a food processor. Process for 1 minute or until blended well.
- Place mixture in a pie plate that is greased. Use fingers and push to sides and bottom till covered.
- Place milk and gelatin in a pan and heat until gelatin is dissolves and it comes to a boil.
- Cool for 5 minutes.
- Place cream cheese and milk in food processor with lemon zest and juice and processor 30 seconds or until thoroughly mixed. Before you add kefir make sure that your mixture is cool and not hot. You don’t want to kill the good bacteria in the kefir.
- Add kefir and sweetener to the cream cheese mixture and process until thoroughly mixed . 15 to 20 seconds.
- Taste your mixture until sweetener is to your taste.
- Pour into pie pan and on top of crust.
- Chill for about an hour or until firm.
- Place strawberries on top.
- Garnish with fresh basil.

can you use anything besides gelatin? like arrowroot or another thickener? thanks!
You could use arrowroot. I am not sure if it would be as thick and gel but I still think it would work.
I wonder if you could use agar powder.

Also, enzymes in fresh mangoes, papaya, and pineapple break down the gelling ability of the agar-agar so that it will not set. Cooking these fruits before adding them to a recipe, however, neutralizes the enzymes so that the agar-agar can set.

9 inch pie plate and you can grease it with olive oil
