Can you ferment your kefir too long?
It is always best to let your kefir ferment for 24 hours. If you let it go an extra day and it is already done it will start to lose some of the benefits of the probiotics and good bacteria’s because they will start to die from lack of food. One way to increase the benefits and to make it less sour is to actually second ferment your kefir. This means to add fruit and let it sit on your counter and ferment for another 1/2 to a full day. This gives the good bacteria something to eat again and actually increases the nutrients.
Over fermented kefir is not bad for you just super sour.
If you let it ferment to long on your counter your grains can die from lack of food. Always do your first ferment on your counter for a day or at the most two. If it is separating into whey and curds ferment it less time.
