I’m always looking for ways to enjoy my kefir. Made with Stevia, kefir ice cream can be enjoyed anytime; even for breakfast! It’s made with half kefir and half yogurt, and is creamy, light, and tart. You can top it with any kind of fruit, but strawberries and black berries are divine.
If you don’t have an ice cream maker that sits on the counter, they are a great investment. It will make ice cream in 20-30 minutes. You can pick them up just about anywhere now. All you do is put all the ingredients in a blender, blend, then pour the contents in the ice cream maker. My recipes tend to be very simple because I don’t have any more time than the rest of you. Make your own probiotic desserts that you know have the right bacteria you need.
Your kids will thank you and beg you to make it. My little Holli got up this morning and said, “Mom I think I really need some of that kefir ice cream because you know it’s good for me.” You know you have hit the jackpot when your kids want your probiotic foods because they’re healthy for them and taste so good. They will remember this for a lifetime. I’m counting on it.
When we were on vacation, my older kids found a TCBY (This Can’t Be Yogurt ) store and wanted to stop for a frozen yogurt. When we walked in, on the wall it said, “Seven Live Active Cultures.” My kids look at each other and said, “Whatever, kefir has at least 30 to 56 active cultures.” It made me so proud that they knew that, even though I have drilled it into their brains for ten years now. They know now, and it will stay with them for a lifetime. Cultured foods are the best and most profound foods to consume.
- 2 cups of second fermented Lemon Kefir
- 2 cups of plain yogurt
- The juice and zest of 1 large lemon
- 1 tsp lemon extract
- 2 whole eggs * see note
- 10 packages of Stevia
- Place all ingredients in the blender and blend for about 1 minute. Taste and see if it’s to your liking. You can always add more Stevia.
- Pour into ice cream maker and process according to manufacturers instructions.
- I like to warm up a couple tablespoons of all fruit jam and pour over the top. You can also puree fruit in blender and pour over top.
If what you eat is happy and healthy, you will be too!
