You and I are a 100 trillion cells of bacteria. You have more bacteria than cells in your body. It is really impossible to consume too much because this is what you are; bacteria.
However in the beginning you need to be very careful as you are starting to consume cultured foods for the first time. You should go very slowly. This is a lot of good bacteria flooding the body all at once.
The good bacteria will try and become dominate and remove pathogens and harmful bacterias. Set up places in the body to grow and thrive. It can become uncomfortable as the body gets use to this new eco -system and can cause a detox or healing crisis.
So go very slowly but in a short amount of time your body will adjust and then you can have as much as you desire.

I crave vinegar and like to take a shot of apple cider vinegar. I eat a lot of vinegar and veggies cooked together with just a touch of sugar. I just ordered the culture starter for veggies and can’t wait to get started. Are there any recipes including vinegar?
You don’t need vinegar because the process of fermentation creates a vinegar tasting product only even better for you.

How would I know if I’ve eaten too much in the way of cultured foods? What symptoms would be present?
It good be gas, bloating feeling a few flu like symptoms that don’t last long and loose bowels. Also your skin can also get pimples as the bad bacteria leaves the body. doesn’t last long but can be something that happens.
