Kefir pudding

I love pudding but it doesn’t like me. Too much sugar and the kinds you buy at the store are loaded with chemicals and additives. I have always wanted to make it with kefir, but it is usually heated which would kill the probiotics in kefir. This recipe solves both of the problems above and gives me a new dessert I can have in 30 seconds.

There are a lot of nutrients in this dish. Kefir, avocados, and a special food; chia seeds.

Chia seeds are a wonderful super food. These tiny, healthy seeds can be made to taste like whatever you want, and their unique gelling action keeps you feeling full for hours. When a chia seed is exposed to water or kefir, it forms a coating of gel, increasing its size and weight. This means that it helps your body think it is full. Chia is the richest plant-source of Omega-3 oil. By weight, chia contains more omega 3 than salmon, and it still tastes like whatever you want.

I use chia seeds in this recipe to thicken the kefir and make it act like pudding. All with the added benefits of omega 3s and making you feel full.
 

30 Second Chocolate Kefir Pudding

By:

Ingredients
  • 8 ounces of kefir
  • 1 avocado peeled and chopped
  • ½ cup sucanat
  • 2 heaping tbsps cocoa powder
  • 2 heaping tbsps of chia seeds
  • 1 teaspoon of rum vanilla

Instructions
  1. Place all ingredients in a blender or food processor and blend for 30 seconds or until well blended and thick like pudding.

Variations:

My daughter likes her with a couple tbsp of peanut butter. Put 2 tbsps of peanut butter or any nut butter in with the other ingredients and blend for 30 seconds.

I like my pudding with a 1/2 of banana. Put this in with the other ingredients and blend for 30 seconds.

Toppings: Chopped nuts, shredded coconut, cacao nibs or my favorite a sprinkle of Celtic or Himalayan sea salt.

    How much stevia would you use in this recipe (liquid or powder)? I made it tonight with some peanut butter, and it was a HUGE hit.

    This is sooooooo AMAZING!!!! I used Goat Kefir and you can’t tell!! I also used maple Syrop instead of sucanat and 1/2 carob and 1/2 cacao. I had put the kefir through the coffee filter so it kind of had a cheese like flavour too :) mmmmmmm THANK YOU!

    Yumm….just made this today with Probiotic coconut water and used stevia…Loved it…Might have to add some frozen raspberries next time for an added yummmmm!
